Entrees and Main Dishes
We have been designing menus for buffets for over 35 years. We can give you excellent advice as to what goes with what, seasonal items, availability, and price. We also have to keep in mind if a venue has a kitchen, what foods travel well and maintain their freshness over time. Special diets can be accommodated, however, there is an upcharge for Gluten Free, Vegan and Lactose Intolerant items.
We also have a variety of preparations for serving Duck, Cornish Game Hen, Leg of Lamb, and Turkey one of my favorites is our Duck Hash. Meatballs, Skewers, and Sliders are popular appetizers as well as buffet offerings.
Some of our favorite beef dishes include: Roast Top Sirloin with Mushroom Wine Sauce, Beef Tenderloin with Mustard Caper Sauce, Traditional Beef Stroganoff, Tenderloin with Chimmichurri, Slow Roasted Boneless Beef Short ribs with a Brandy Demi Glaze and Green Peppercorns or Medallions of Beef with roasted sweet onions, whole grain mustard and Port Wine sauce.
Orange/Pineapple, Bourbon BBQ, Swedish, Sate Meatballs with Peanut Sauce, Chutney Glazed, Sweet & Zesty with Chili Sauce, Cranberry, Teriyaki & Marinara.
A delicious new addition to the culinary lineup with beef, chicken, salmon, lamb, and pork seasoned to go with your menu and sauces that will add to the flavor.
Of course we have a wonderful ham for the holidays or brunches, as well as a selection of pork loin such as one dish that we roll in Dijon Mustard & brown sugar, then flambé with Brandy. We also have a Mojo Citrus Sauce for a Mexican or Spanish flair. Apple Chutney Glaze for the colder months and we do a great job with Chinese Style BBQ Pork.
Chicken is a blank canvas just waiting for our special culinary touches. We do a Pecan crusted chicken breast with a Sour Cream, Dijon, & White Wine sauce. Another variation includes roasted pears & Riesling wine. How about Chicken Marsala with a cream sauce & mushrooms. Chicken Parmesan or Chicken with Capers, tomatoes, & artichokes in a lemon basil white wine sauce? Stuffed chicken breasts with spinach, roasted red peppers, & seasonings and served with a white wine sauce are all very popular as well. Just tell us what you’d like and we’ll make it happen!
We offer a variety of sauces for our Baked King Salmon, some of them are: Cucumber & Dill, Teriyaki & Sweet Soy, Shallot Chardonnay Beurre Blac, Orange & Balsamic Reduction, sun-dried Tomato Basil Butter, or you can choose Black Cod, Halibut or another type of fish.
